I had asparagus as an appetizer earlier in the week. With my metabolism, I could tell not long after that I did indeed eat enough asparagus.

Saw this on the AP news feed today. The writer and I totally disagree on the final summery sentence.

A North Texas man has drowned when water being released from a dam overtook his kayak.

Chad Lorance with the Tarrant Regional Water District said Tuesday that 29-year-old Joshua Reed of Fort Worth was on the water with others when they disregarded signs Saturday and entered a restricted part of the Trinity River adjacent to the main dam for Eagle Mountain Lake.

Lorance says water was being released from the dam to prevent the lake from overflowing from recent rains.

The Tarrant County medical examiner's office says Reed died of accidental drowning.

Reed's body was recovered Sunday. He is among the nine weather-related deaths over the weekend in Texas.

I would have keyed more off the part where he chooses to ignore the signs and put himself in danger rather the death resulting from the storm. (I know , I know personal responsibility is not PC these days, sorries)

Last night I watched two guys on bicycles playing giant jenga outside at a bar. It took a long time, but was pretty awesome to watch. They did surprisingly well!

New super market coming into town called Rainbow. Anyone ever experience one of these? I think I saw one when driving though Minnesota once.

I used to live in a suburb of St Paul, MN and we had 2 grocery stores.. Cub Foods and Rainbow. So, yes. I've heard of it. I preferred the Cub store, but the Rainbow wasn't bad. I lived a little closer to the Cub too.

You took too long to get here. The remainder of chicken tacos turned into chicken taco nachos today. So delicious!! The whole family has asked we switch permanently to chicken tacos from the regular ground beef tacos.

So easy and completely made up by me out of dinner desperation one evening.

I roast boneless/skinless chicken breasts drizzled with a little olive oil and seasoned with salt and pepper in a 375 degree oven until they’re almost done. If I’m not using them immediately I just bag them and stick them in the fridge after they’ve cooled.
If using immediately, I shred them into a skillet and dump the juices out of the roasting sheet into the skillet. Set over medium/high heat until the chicken is fully cooked. I add some chicken stock if the chicken gets too dry and allow it to reduce down. Then I add chili powder, cumin, garlic and a little paprika to taste. I’ve also used Old El Paso taco seasoning mix and it works perfectly and lends that traditional tex/mex taco flavor. Then I add a can of Ro-Tel. I’ve been using original because one of my boys doesn’t like really spicy food but it would be perfect with the hot Ro-Tel. If I’m making a smaller batch and don’t want to use a whole can of Ro-Tel, then I will instead add some regular salsa. I’m currently in love with Herdez salsa. I’ve been wanting to add some salsa verde so I will try that next time. Then of course you can use whatever type of tortillas you want. I love corn but the kids like crunchy and hubby likes flour so I’ve usually got all three. Top with whatever you like on your tacos. I like cheese and sour cream, one kid eats them plain, other kid puts cheese and a spicy ranch sauce and hubby eats whatever I hand him!! It really is such a fast meal and you can adjust it to your liking! Enjoy!!!
And the leftovers were great!

We make chicken tacos as well but we do the chicken in the crock pot with some taco seasoning and salsa.
