I'm trying to find a recipe for pecan crusted chicken breast. I had it at a restaurant at the lake a while back and it was yummy.




Pecan crusted chicken is pretty neat, and the same recipe would work for salmon and trout. You could play with these variations:

Variations on the crust:
1. add cinnamon and poultry seasoning (pretty quick and simple)
2. add cumin and parsley
3. add paprika, cayenne and parsley
4. add shredded parmesan to whatever spices you like
5. add browned and chopped sausage to the pecans (I like chorizo)

Variations on what makes the crust stick to the chicken.
(and no matter what, after you coat the chicken, put it back in the fridge for a little bit. The coating will 'stay' better.)
1. basic egg, milk and flour
2. buttermilk
3. egg, milk and cornstarch (I've not tried this one personally)
4. plain yogurt

You can even verge away from the pecans to use; crushed cornflakes, panko, crushed pretzels (a local restaurant got rave reviews one summer for Snyders' pretzel crusted salmon.), once I even just chopped up the leftovers in a can of mixed nuts that was lying around.

My other specialties...foil-wrapped fish baked with tomatoes, lemon, dill and feta cheese, a beer-can chicken, roasted beets (not that that's particularly tricky), shrimp scampi, lemon chicken (big cheat, buy a roasted chicken at the market, and get a bottle of Rao's lemon sauce, drizzle the lemon sauce over the roasted chicken and run it back under the broiler), creme brulee (hey! it involves a blowtorch, how could it not be fun?)

I do a bacon wrapped lemon pepper chicken that is terrific! Take a boneless skinless chicken breast and sprinkle with lemon pepper...wrap in bacon and add more lemon pepper. Cook on the grill till the chicken is done...be sure to use a low heat or the bacon will burn.

This also works well with a special secret seasoning mix I get from "Steaks at the Lake"...but I usually do it as an appetiser. Cut the chicken into bite size pieces cover with the spice mix, wrap with bacon, secure with a big tooth pick and grill. There are NEVER any left over.

Those both sound excellent! I'll have to give those a try. I do bacon-wrapped figs stuffed with gorgonzola when I have fresh figs.

Taking the topic off of food for a second. My best friend just called me from Seattle. Her boyfriend is a sugar daddy for her. She is a social worker and he is a fed ex pilot. She is always calling to wave his money in front of my face, and I just ignore it, I dont care. The guy is taking her on an all expense paid trip to Hawaii for her birthday. She keeps snooping through all of his stuff because she wants to know if he bought a ring or not. She found some business cards in his Jeep for 2 jewlers in town, one card had $4500.00 written on it and the other one had $6500.00 written on the back of it. I told her to quit snooping because she was going to ruin his surprise. I dont know why it irritates me that she's trying to ruin this for him. GRR...okay I'm done venting.

I have a friend that did somewhat the same thing (searching for clues about when/if he bought a ring). To me, it would suck the romance right out of the proposal.

I don't think they are endangered everywhere, they may be in your particular part of their habitat but not everywhere. For instance, you pretty much can't touch a snake in Iowa because they protect all their native species but I catch the same stuff here in abundance.

That is what I feared the most- that that thing would become unfrozen and come back to life- you just never know-oh my daughter is the drama queen at times with spiders etc- I did shake a finger at her regarding getting these bugs for her and of course I had to handle them and get them on her poster board so she could cover them with tape. I don't mind helping and I know she truly is afraid of some bugs but I didn't like the fact that I was known as a PM murderer. But I am certainly glad its OUT of my freezer. I saw its mate around the yard this past weekend and said I was sorry - I know I am crazy. I felt bad.

When I did bug posters we used straight pins... but gotta be careful to pin the little sucker on there just right...LOL. Oh I enjoyed collecting the leaves... I still have my leave book from when I was in 7th grade science.. OMG...that was so long ago.

Imagine all her bugs thawing out as the teacher was grading ..they start wigglin and such...teacher rubs her eyes to make sure she's not seeing things... yikes... LOL... ewww...

Note to self: Once I start teaching..and if I assign a bug project... no freezing them.. instead OD them on alcohol...and stabem with pins...LOL.

The best thing is to put glue them to the head of the pin, then stick the pin in the board. That way you don't damage the bug. Also, you can use smaller species without breaking them this way.

I personally can't wait until my kid starts getting those assignments and going on field trips. I bought him a bug net this summer so we could catch grasshoppers for fish bait. Now he always wants to catch bugs.
