People are lazy when it comes to writing out a full payee name when it's more than a couple of words, particularly when the payee is a company or other entity. Some organizations, like the YMCA, have even dropped their longer names and adopted their initials as their legal name. And a lot of businesses include messages like "Make your check payable to RMHP" on their bills.
Using the examples in your question, I suggest you encourage the organization to indorse the checks using its full name or some version like "Rocky Mntn Hlth Pln" and accept the checks for deposit. The indorsement could also include "RMHP" just to cover the bases, but there's really no need for it. Only in the unlikely event that some other organization using the initials RMHP is the intended payee and the check issuer objects will there be any problem.
