We have our residential mortgage applications available to print on our web site. We include our privacy notice within those documents. Does the applicant need to acknowledge receipt or acceptance of the privacy notice?
Answer: 

Even in a paper environment, customers are not required to acknowledge receipt or acceptance of the privacy notice. You just have to be able to reasonably demonstrate that you provided the notice. Many institutions opt to do that by requiring an acknowledgment signature, but there are other ways to do that, like including it on the same page as the web application.
