This is really delicious and makes a beautiful parfait. I thought I would share with my friends here in BOL.

FYI- The Real Deal Eaglebrand milk seems to be quite a bit sweeter than the generic sweetened condensed milk, but that's just my opinion.

Cookies and Cream Pudding

Ingredients:
1 can sweetened condensed milk (Eaglebrand)
1 lg. box Jell-O Cookies and Cream instant pudding
1 pint heavy whipping cream
½ package Oreo Cookies
1 ½ cups ice cold water

Directions:
Mix Eaglebrand, box of pudding, and ice cold water together in a large bowl until well blended. Place in refrigerator to set. While pudding sets, whip pint of heavy whipping cream in a cold bowl with electric mixer until fluffy, forming stiff peaks. After pudding is set, fold the heavy whipping cream into it. Break Oreos into about four pieces and fold into the mixture. Refrigerate and serve.

Cookie Dough Cheese Ball

Ingredients:
1 (17.5 oz) box or pouch chocolate chip cookie dough mix
8 oz cream cheese, softened
1 stick butter, softened
2 cups chopped pecans, divided

Directions:
combine cookie mix, cream cheese, butter, and 1 cup chopped pecans in a large mixer bowl. Mix at low speed for 1 minute and then on medium speed until well combined. Shape into a one large ball (or two smaller balls), roll in reserved cup of pecans, then wrap in clear wrap & chill for at least 3 hours.

Serve with Vanilla Wafers or Graham Crackers

Extra Dry Vodka Martini

* Take bottle of vodka from freezer
* Pour into glass
* Wave bottle of vermouth over glass, being careful not to drip any into glass
* Enjoy

That cookie dough ball sounds fantastic!

This weekend, I made pesto chicken and Spanish chorizo skewers.

Make batch of pesto. Rub on to chicken breast tenders; cover and chill for two hours. Soak skewers in water. Cut chorizo (the Spanish variety is not like the Mexican kind, it's more like pepperoni) into 1/2 inch pieces on the bias. Skewer alternatively for a total of six pieces. Grill over medium heat about 8-10 minutes each side.

Oh, and Eli, that's just how I like mine too.

The cookie dough thing sounds fantastic - I may have to try that for the next club function.

The martini recipe could use a splash of olive brine. wink

Anyone know a good recipe for Buttermilk Pie? I had that in KY not too long ago and it was SO good! I found recipes online, yet, there's different variations...I want it to taste JUST like the one in KY!! laugh

The Cookie Dough Cheese Ball recipe ingredients looks similar to a Resident Chef cheese ball that a co worker orders a LOT of. I'll have to make one. YUMMY!!

The Cookies & Cream Pudding looks awesome too!!

I have one that I got from The Cabin, an old slave cabin that was turned into a resturant, just outside of New Orleans, LA. I got the recipe in the summer of 2000. I wonder if the place is still there after hurricane Katrina??? Does anyone know? I also have a couple more. I will try to remember to post them this afternoon when I get home. I don't know how close they will be to Kentucky, but I promise they are all good. smile

The Cabin Buttermilk Pie

2 cups Sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon vanilla
2 tablespoons cornstarch
1/4 lb. melted butter
3 large eggs
1 cup buttermilk

Mix the first 7 ingredients on slow speed until well blended and uniform. Add the buttermilk and mix well. Pour into UNBAKED 9" pie shell and bake at 350 degrees for 40 minutes, or until set and brown on top.

Poor Claudia's Buttermilk Pie

1 cup sugar
3 tablespoons flour
2 eggs beaten
1/2 cup margarine (1 stick) melted
2 teaspoons vanilla extract
1 teaspoon lemon extract
1 cup buttermilk

Preheat oven to 425 degrees. Combine sugar and flour in bowl. Add eggs, margarine, buttermilk and flavorings. Mix well, pour into 9" UNBAKED pie shell. Bake at 425 degrees for 10 minutes, reduce temperature to 350 degrees and bake for 30 minutes more.

Prettysoon- you might also want check out the other buttermilk pie recipe, it has more of a tart taste. I don't know what a Kentucky Buttermilk Pie is like.

I made thsi chicken recipe last ngith and it was DELISH!!! Even once i got into bed, I kept talking about hwo good the house smelled fromthsi chicken. Lucky for all of us, the recipe is easy!

Sauce:
1/4 cup melted butter
2T soy sauce
3T minced fresh garlic (mien was kinda coarse)
1/4t ground pepper
Mix all these in a bowl.

Recipe called for a whole chicken cut in half--I used 4 bone-in skin-on chicken thighs. Broil 6"-8" from boiler (didn't specify heat, I set mine to 400) for 30-35 minutes, flipping sides every 10 minutes. During the last 10 or so minutes, brush the sauce mixture on (I brushed it on ever 3-4 minutes, both sides).

Very yummy!!!

Had chicken cacciatori last night:

saute sliced boneless skinless chicken breast with onion and green bell pepper diced medium sized pour in a can of diced tomatoes, and I personally think it tastes best if you use both canned and fresh tomatoes, a teaspoon of crushed garlic or one minced clove, saute until looks good, serve over fettucini with alfredo sauce and garlic bread. It's my medium daughters favorite.

Homemade BBQ chicken wings... Sprinkle wings with Garlic and Herb seasoning (no salt..lawry's) and bake in oven for 40 minutes at 350, throw on grill for a few minutes and baste with Jack Daniels BBQ sauce.... very very yummy!!! laugh Makes a nice appetizer too!
Anyone know of a more "to die for" bbq sauce,,,homemade or not?
