That one's easy - just Google "Paula Deen cobbler" and it should pop up. I don't remember it exactly off the top of my head, but you melt the metter in the baking dish, put the dough on the bottom, pour the fruit over the top, and then stick the whole thing in the oven. It's awesome, but I don't always want mine quite that doughy. Since she requested "light" I figured the crust on top kind might be better.

My kid loves it because it does have a lot of dough..well, really, it depends on how much fruit you put in...but if he had it his way...it would be ALL dough! LOL.

This way pre-dates Paula Dean Yeah, but she published a good version of it. It's easier to look for hers than to wade through all the carp ones that I'm sure are floating around on the net.

This might not be what you are looking for but its a great recipe to have on hand since it is sooo easy and tasty.
Fruit Salad
Ingredients: 1 (20 ounce) can pineapple chunks, juice reserved 2 apples, peeled and cored 1 (21 ounce) can peach pie filling 2 bananas, peeled and diced 3 kiwis 1 pint strawberries
Directions: 1. In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes. 2. In a large salad bowl, combine the peach pie filling and pineapple chunks. 3. Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes. 4. Peel and slice kiwi and 1/2 of strawberries. Chop the other 1/2 of strawberries and set aside. 5. Remove bananas from pineapple juice and add to pie filling mixture. Add chopped strawberries; toss together. 6. Arrange kiwi slices around the edge of the serving bowl and alternate with strawberry slices. Chill and serve.
This recipe is very adaptable. You can use apple or strawberry pie filling. For fruit you can use grapes, mandarin oranges, blueberries. I used 1 apples, a whole bunch of grapes and 2 bananas withthe pie filling and pineapples when I made it last weekend. It was very pretty when I used red and green grape during the holiday. Even the next day the fruit doesn't turn brown at all.
The only other comments I would make is to add the kiwi very gently at the end since they break up so easily.

Frog Eye Salad
3 qt. water 1 Tbsp. cooking oil 1 (16 oz.) pkg. Acini de Pepe 1 c. sugar 1 Tbsp. flour 2 1/2 tsp. salt 1 3/4 c. pineapple juice 2 eggs, beaten 1 Tbsp. lemon juice 3 cans mandarin oranges, drained 2 cans pineapple chunks, drained (reserve juice) 1 (20 oz.) can crushed pineapple, drained (reserve juice) 1 large container non dairy whipping topping (cool whip) 1 c. miniature marshmallows (mom doesn’t use these) 1 c. coconut (optional mom doesn’t use this either) Get out your biggest cooking pot and put the 3 quarts water and 2 teaspoons salt on to boil, along with the cooking oil. When boiling, add the Acini de Pepe (located in the macaroni spaghetti section at the store) and cook at a rolling boil until done, about 20 minutes. Drain and rinse with cold water, drain again and let cool. Meanwhile, combine sugar, flour and 1/2 teaspoon salt. Gradually stir in pineapple juice and eggs. Cook over moderate heat, stirring until thick (coats the back of a spoon). Add lemon juice and set aside to cool. When both mixtures are slightly cool, combine them and mix thoroughly and refrigerate over night in an airtight container. Add rest of ingredients and mix lightly, but thoroughly. Refrigerate in an airtight container. Will keep a week in refrigerator. Will sere 25. Recipe can be halve quite easily.

^^^ Reminded me - what about a fruit pizza? There's lots of versions, but the one I like to use is:
2 cans crescent roll dough sliced & quartered pineapple peeled & sliced kiwi sliced strawberries sliced star fruit 1 large can apple pie filling (or fresh green apples, peeled, sliced, and stewed lightly with butter, brown sugar, and cinnamon)
Line an edged cookie sheet with parchment. Roll out the dough into a single layer that fills the pan. Bake for a few minutes at 350, just until it starts to puff and brown a little bit. Spread the apples/pie filling on the dough. Layer with other fruits (my twist here: I sprinkle with a bit of brown sugar and cinnamon, then drizzle condensed milk over the whole thing). Bake at 350 until warm but don't let the fruit start to soften/brown.

Very Berry Cups I made these up one day 10 years ago while trying to make a fun red-white-and blue dessert for a 4th of July bbq. Everyone loved them and they've been a hit every since.  This recipe makes about 10-12 1 box of waffle bowls (the ones you use for ice cream) 3-4 single containers of vanilla yogurt (I use the Yoplait vanilla) 2 tubs of Cool Whip Lite Raspberries Strawberries Blueberries Chocolate shavings (optional) Mix vanilla yogurt with Cool Whip Lite. Add yogurt and/or Cool Whip to taste. This will make a light vanilla mousse-like creme. YUM! Fill each waffle bowl with the mousse mixture, then top with raspberries, blueberries and sliced strawberries. Sprinkle with chocolate shavings, if desired. Another hint - if you make the mousse ahead of time, fill the bowls and then set in the fridge for a few hours. It will be a stiffer mixture. You can also freeze them and have more of a frozen yogurt mousse consistency. Top with berries right before serving.

Sort of similar to Agg's recipe, but more fattening:
1 pkg whipped cream cheese, softened 1 reg tub Cool Whip crumbled vanilla wafers (or graham crackers, or Oreos) fresh berries can whip cream
Whip together cream cheese and Cool Whip. Return to fridge until "set" (will be like a slightly stiff mousse). In wine glasses, layer crumbs, mousse, berries (repeat, if space) and top with a dollop of whip cream. Will hold in fridge, but the whip cream will "wilt" a little.

This recipe is amazing. It is kind of like a fruit pizza with a shortbread type crust, white chocolate, and topped with fruit.
White Chocolate Fruit Tart
Ingredients
3/4 cup butter, softened 1/2 cup confectioners' sugar 1 1/2 cups all-purpose flour FILLING: 1 (10 ounce) package vanilla or white chips, melted and cooled 1/4 cup heavy whipping cream 1 (8 ounce) package cream cheese, softened 1 (20 ounce) can pineapple chunks, undrained 1 pint fresh strawberries, sliced 1 (11 ounce) can mandarin oranges, drained 2 kiwifruit, peeled and sliced GLAZE: 3 tablespoons sugar 2 teaspoons cornstarch 1/2 teaspoon lemon juice Directions
In a small mixing bowl, cream butter and confectioners' sugar until light and fluffy. Gradually add flour; mix well. Press into an ungreased 11-in. tart pan with removable bottom or 12-in. pizza pan with sides. Bake at 300 degrees F for 25-30 minutes or until lightly browned. Cool on a wire rack. For filling, in a small mixing bowl, beat melted chips and cream. Add cream cheese and beat until smooth. Spread over crust. Refrigerate for 30 minutes. Drain pineapple, reserving 1/2 cup juice; set juice aside. Arrange the pineapple, strawberries, oranges and kiwi over filling. For glaze, in a small saucepan, combine sugar and cornstarch. Stir in lemon juice and reserved pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Cool; brush over fruit. Refrigerate for 1 hour before serving. Refrigerate leftovers.

My apple crisp recipe is:
Fill an 8 or 9" square pan with sliced, peeled apples Sprinkle with cinnamon to taste
Cut together to a nice crumb: 3/4 C Flour 1 C Sugar 1/3 C Butter
Bake at 350 45-60 minutes until golden and bubbly.
You can add chopped pecans or the nut of your choice to the crumbs.
Serve either room temperature, or warm with Cinnamon Ice Cream
Cinnamon Ice Cream Take a container or good vanilla ice cream and let it soften Put it into a bowl and add cinnamon to taste (it will take more than you think) Put back into ice cream container and into the freezer. It does not freeze very hard after this.
Serve warm apple crisp with a scoop of the ice cream on top.
Mmmmmmmmmmmmmm!
