Microwave Peanut Brittle
1 c. sugar 1/2 c. light corn syrup 1 c. peanuts (cashews or almonds also work) 1 Tbsp butter 1 tsp vanilla 1 tsp baking soda
Combine sugar and corn syrup in a 1 1/2 to 2 quart microwave safe bowl. Heat on high for 4 minutes, stirring after 2 minutes. Meanwhile, grease a large cookie sheet and set aside. Stir nuts into sugar mixture. Heat on high 3 to 5 minutes or until light brown. Stir in the butter and vanilla until blended. Microwave 1 to 3 minutes longer until syrup is bubbly and golden. Add baking soda, stirring until frothy. Pour candy mixture onto cookie sheet. Let stand until cool. Break apart into small pieces. Store in an air tight container.
Spicy Candied Pecans
In 375 degree oven, roast 2 cups of pecans on a baking sheet, stirring once, until toasted, about 8 minutes. Stir together 1 Tbsp sugar, 1/4 tsp salt and 1/8 tsp cayenne pepper in a cup. Transfer hot nuts to a large bowl. Drizzle 2 Tbsp melted butter on top and toss well. Sprinkle sugar mixture on top and toss again. Let cool completely (mixture will harden).

I love making chocolate peanut clusters in a crockpot. It's super easy and makes about 70 - 80 pieces. Great for sharing.
Ingredients 2 pounds salted dry-roasted peanuts -- depending on how salty you want them... I actually use 1 pound salted and 1 pound unsalted. 4 ounces German's sweet chocolate (about 4 squares) One 12-ounce package semisweet chocolate chips (about 2 cups) 2 1/2 pounds white almond bark
Directions Put the peanuts in the bottom of a 4-quart slow cooker. Layer the chocolate over the peanuts, beginning with the sweet chocolate, followed by the chocolate chips and then the almond bark. Set the temperature on low and cook for 3 hours. Do not stir the mixture.
After 3 hours, stir the mixture with a wooden spoon until smooth. Drop the candy onto wax paper. Allow the candy to cool completely before removing.

The peanut clusters I make are very simple. Jar of dry roasted peanuts ( I use the lightly salted). Melt a whole block of chocolate almond bark in the microwave. I break the bar into the blocks and then start out with 1 minute intervals. Stirring and checking it often. When it is completely melted, dump in the peanuts. Stir completely and drop my spoonfuls on waxed paper. Very easy and good.

It's not candy in the traditional sense, but a family favorite for us are pretzels dipped in almond bark. My grandma always made them at Christmastime. It's really easy to do, but adventures of my own have taught me that you have to be careful how much almond bark you melt. It always goes further than I expect which means I either spend more time dipping pretzels than I planned, or (more likely) I eventually look at the number of dipped pretzels I already have versus the amount of almond bark I have left and decide, "Yeah...that's totally enough to take to the office."

Here's a simple recipe for white chocolate pretzel candy:
2 cups peanuts 4 cups Crispix cereal 2 cups small pretzel twists 4 cups melted white chocolate
combine all ingredients and stir until everything is covered by the white chocolate. Spread out onto wax paper and cool. Break up and it's done!
I have people ask for the recipe after they taste it...it's marvelous!

Joker - I have not tried it with parchment paper but I did have issues with the foil sticking. I think I'd try the paper.

Have you ever tried this with parchment paper? With the foil, is their any issue with sticking?? I have made it many times and have never had an issue with the foil sticking.
