Mom comes into the bank on a Saturday and cashes a check for $50 made payable to her minor son. On Monday (same business day) she comes into the bank and cashes a check payable to her for $12,000. Do we also need to do a part 1 for the minor son? If so, what do we list for ID information as our CIP policy doesn't require us to receive ID for minors if there is an adult that is one the account as well. Do I list student as his occupation?

Since the transactions were conducted by the same person, you must aggregate the transactions. If you know the minor is a student, you list that for occupation. If you don't have an identification for the minor because they were not present for the transaction and are not subject to CIP, you simply check the "unknown" box for the minor's identification.
